Chocolate Chia Pudding
You might remember the CHIA pet and the commercial jingle, Ch, Ch, Ch, Chia! It played over and over. What we didn’t know then was that Chia was and is a “super food” loaded with Super-Energizing Power. Due to its unique blend of Protein, Essential Fats, Fiber, Complex Carbohydrates, and Antioxidants, chia is unrivaled among seeds and grains for providing energy to your body.

What to do with this tiny wonder seed? Chia seeds swell in liquid, so think of them as tiny tapioca. Add to your smoothie for extra creaminess, or sprinkle chia seeds dry onto your salad. I’ve been making this Chocolate version of Chia “Tapioca” Pudding; it’s satisfying and delicious.
1. Put all ingredients in a glass bowl.
2. Mix very well to combine until you don’t see any powder left.
3. Cover and refrigerate for minimum one hour.
