Mrs. Thompson’s Double Chocolate Smoothie

We had two of my sons friends stay with us this past week, and while it was loads of fun, and hysterically funny,  food was a big issue. I could write a quick mini-book on how to feed young teenage boys in a healthy way, and how to battle the contraband junk food bags that sneak in.. Instead I’ll share one of their favorite recipes from the week. The parents have asked for this recipe because the boys went home talking about it.  Not bad for something that’s incredibly healthy. The boys know that Mrs. Thompson feeds them organic food, and one of them is really into chia seeds, but let’s face it, they really just want it to taste good. Here you go, friend. It’s Mrs. Thompson’s Double Chocolate Smoothie. Ingredients 1 scoop protein powder of choice (I recommend Vega One, Vanilla or Chocolate, or Organic Hemp Protein) 1 tablespoon chia seeds, whole (for energy, Omega 3’s, and brain support) 1 tablespoon raw organic cocoa powder (for an energy boost, endorphins, and high levels of antioxidants) 1 tablespoon raw organic cocoa nibs (same as above and to add a little bit of crunch) 1 tablespoon raw organic coconut flakes…

Nutty Butter Granola Bars

I made these earlier this year for my talk with Middleburg Polo Academy. They are quick, easy and use ingredients you normally have in your cupboard. I promise you the kids will ask for seconds! If you are missing an ingredient, be creative, have fun, and experiment. These are easy to play around with and find substitute ingredients for. Ingredients 1/3 cup honey (or coconut nectar) 1/4 cup almond butter or tahini 2 tablespoon coconut butter or unsalted butter 1 cup Crisp-O-Cereal or rice cereal 1 cup old fashioned oats 1/4 cup dried fruit Preparation 1. Add cereal, oats and fruit to a large mixing bowl. 2. Melt honey, almond butter and butter over medium heat until smooth. This will take a minute or two. Add to the dried mixture and fold gently. Scoop onto a lined baking sheet or mini cupcake liners on a baking sheet and refrigerate for 15 minutes or so. 3. These tasty treats will last in the refrigerator for up to a week covered.
